Hash Brown Casserole
2 pounds frozen hash browns ( used WalMart's Great Value brand)
1 can cream of chicken soup
8 ounces shredded cheddar cheese
8 ounces sour cream
2 sticks margarine, melted
2 cups corn flakes

        Spread potatoes evenly in greased 9 x 13 inch  casserole pan.

Mix together soup, sour cream, cheese and 1 stick of melted margarine.
Spread over potatoes.
Crumble cornflakes over top.
Pour remaining stick of melted margarine over top.
Bake 400 degrees about 1 hour and 15 minutes.

Chicken Enchiladas
2 seasoned chicken breasts; grill, rest and slice
1/2 jar (15 oz) green chile salsa
1 Jalapeno pepper; chopped (optional)
1 - 1 1/2 cups heavy whipping cream
4 flour tortillas (depends on size)
2 cups shredded Pepper Jack cheese
Mix chicken with salsa and Jalapeno. Pour whipping cream into a shallow bowl
Dips each tortilla in cream then place each tortilla in a baking dish.
Spoon chicken mixture into tortilla and sprinkle with cheese. Roll tortillas
and lay seam side down in dish. Pour remaining whipping cream over tortillas
and sprinkle with remaining cheese. Bake at 350 for 25 minutes.
NOTES :
In place of the store bought salsa, Green Chili Salsa recipe
2 Poblano chili peppers
2 mild green chilies or 2 Jalapeno peppers
½ cup minced red onion
2 tablespoons chopped cilantro
juice of 1/2 fresh lime
salt and pepper to taste
Roast chili peppers by placing on a baking sheet about 5-inches from the
heat source under the broiler with your oven set to broil and the oven door
slightly open so the burner stays on, or in a 450° oven with the oven door
shut. Check and turn often until peppers are charred on the outside and
tender. Remove from oven and immediately place in a plastic bag and allow to
cool. Remove from bag and remove the seeds and the peel from the peppers,
reserving all the juices.
Chop roasted peppers and combine with reserved juices and remaining
ingredients.

or this way can be done as well

1 tablespoon olive oil
1/2 cup chopped white onion
1/2 teaspoon garlic powder
1 (4 oz.) can diced green chilies
1 Jalapeno pepper; chopped
1 can cream of chicken soup
1/2 cup sour cream
2 cups cubed, cooked chicken breast (2 breasts)
1/2 cup shredded cheddar
1/2 cup shredded Monterey jack cheese
6 corn (traditional) or flour tortillas
1/3 cup milk or 1 can enchilada sauce
Preheat oven to 350° and lightly grease a medium baking dish. In a skillet
over medium heat, sauté onion in oil until tender; add garlic and Jalapeno.
Stir in green chilies, soup and sour cream; mix well. Remove ¾ cup of
mixture and add chicken and ½ cup of combined cheeses, stir. Fill each
tortilla with chicken mixture and roll up. Place seam side down in prepared
baking dish. Add milk to the remaining sauce in the skillet and stir well.
Spoon the mixture over the rolled tortillas and top with remaining ½ cup
combined cheeses. Bake 30 to 35 minutes until cheese is melted and sauce is
bubbly. Serve hot garnished with sour cream, chopped green onions and fresh
salsa. For spicier enchiladas use 1 can enchilada sauce instead of milk.

Oh thats good your feeling better then!!!

Stuffed Cabbage – 
Serve with hot rolls for a great dinner idea!

Ingredients:
12 large cabbage leaves 1/8 t pepper
½ c cooked rice 1 jar spaghetti or tomato sauce
½ t salt 1/4 t crushed thyme & oregano
chopped onion and green pepper
1 lb lean ground beef or ½ beef & ½ Italian sausage
Directions:
Wash cabbage leaves. Boil 4 cups water. Turn off heat. Soak
leaves in this water for 5 minutes. You can soak entire head and then
remove the needed leaves after soaking. Remove, drain and cool.
Combine ground meat, rice, salt, onion, Green pepper, pepper and
thyme. Place 3 tbsp meat mixture on each loaf and roll firmly. Place
in electric slow cooker. Pour tomato sauce over stuffed cabbage.
Cover and cook on low setting for 8 - 10 hours.

American Blessing Mix

American Blessing Mix

2 cups Bugles brand corn snacks
2 cups small pretzels
1 cup candy corn
1 cup dried fruit bits or raisins
1 cup peanuts or sunflower seeds
1 cup M&Ms brand chocolate candy
16 Hershey's brand chocolate kisses

Directions

In a large bowl, gently mix all ingredients except Hershey's Kisses.

Place 1/3 to 1/2 cup Blessing Mix in small cellophane treat bags. Add
one Hershey's Kiss to each bag. Close bag with chenille stem or twist-tie.

Hand-write your own tags with the following wording.

Cut out tags, and attach one to each bag.

Makes 16 Blessing Mix gift bags.

Pig Pickin' Cake


1 yellow cake mix
1 can mandarin oranges, juice reserved
4 eggs
� cup vegetable oil
16 oz package frozen whipped topping, thawed
15 oz can crushed pineapple, drained
1 package instant vanilla pudding mix

Mix together cake mix, canned oranges with juice, eggs, and oil. Pour batter
into 3 greased and floured 8'' round pans. Layers will be thin.

Bake at 350� for 25-30 minutes, or until cake tests done. Cool layers on
wire racks.

Mix together whipped topping, drained pineapple, and instant pudding mix.

Fill and frost the cooled cake. Refrigerate until ready to eat.

shrimp dip  fast and esy and oh so yummy



Take a softened cream cheese. Cover with Cocktail sauce and a half-
can tiny shrimp (drained). Serve with assorted crackers
