Smiles well I would love that, Im not much for following the card either but it give me an idea on what to start with...Im more a pinch of this and alot of hot sauce to spice Mine up,

Im one of those who likes hot sauce on everything..well pretty much anything.,

whats your favorite dish to make?

i've been looking for a good home made white bread recipe. one that's light and fluffy. the ones i've been making are pretty dense, good but dense. any one got a good recipe or ideas on what i could be doing differently?

Chicken Quesadillas

About 1 tbs olive oil
1 medium onion diced
about 1 ½  tsp minced garlic
1 chicken breast cooked and chopped
Mexican Fiesta Seasoning
Flour tortillas
Co-Jack shredded cheese
Cooking spray

In a skillet heat the olive oil.  Saute onion and garlic in the oil until almost clear.  Add chicken and heat until hot.  Set aside with lid on pan

Over medium heat in a nonstick skillet that has been sprayed, place 1 tortilla.  Sprinkle about ¼ cup cheese over top.  Add about ½ cup chicken mixture.  Sprinkle with another ¼ cup cheese.  Heat for 3 minutes.  Flip and heat for another 3 minutes.  It should be golden brown and crispy.

Serve with sour cream and salsa with refried beans on the side.

I'll be honest i wouldnt eat any bread I made, lol..well i havnt tried in a long time but the last event well the dog wouldnt or couldnt eat it,  nuff said on that lol

I thought it looked yummy too and it said easy so i thought i would send it to you and let you decide..

Beef and Tortilla BakeServes 6 1 lb. ground beef1 c. chopped onion10 oz. Can enchilada sauce8 oz. Can tomato sauce16 oz. Can refried beans2/3 c. evaporated milk5 oz. Tortilla chips, slightly crushed2 oz. Whole chips1 c. shredded Monterey Jack cheese Preheat oven to 375. Heat a medium skillet over medium high heat; add beef and onion. Cook until beef is browned and crumbly, about 10 minutes; drain well. Add enchilada and tomato sauces to skillet; stir well. Cook until slightly thickened, about 10 minutes. Spoon beef mixture into 2 quart baking dish. Combine beans and evaporated milk in a small bowl. Spread over beef mixture. Arrange whole tortilla chips around the edge of dish. Top casserole with crushed chips. Bake until hot and bubbly, about 20 minutes.

i'm gonna try that bread recipe soon. i just made one today that was an egg bread and it was very yummy.

microwave applesauce

4 apples cored and peeled (we use red delicious), cut into cubes

1/4 cup sugar

1 tblspn lemon juice

1/4 tsp cinnamon

course salt

put apple cubes, sugar lemon juice cinnamon and a pinch of salt into microwave safe dish. microwave on high for 10-15 minutes until very tender, stirring half way thru. remove and mash. eat warm or cover and put in frig. will keep up to 2 weeks.

we love this stuff at our house, we eat it alone or mix it in with plain oatmeal. it is very good with out the cinnamon too.

Fresh Pear Cake
 
3 eggs
1 1/4 cups light vegetable oil
2 cups granulated sugar
3 cups all-purpose flour
1 tsp. salt
2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. vanilla extract
3 to 4 cups pears, cored and peeled and thinly sliced
 
Preheat oven to 350 degrees F (180 C). Grease a 10-inch bundt or tube style pan. (I used 2  9 x 9 square cake pans and reduced baking time)
 
In a large mixing bowl, combine eggs, oil and sugar; beat well.
In a medium size bowl, combine the flour, salt, cinnamon, and baking soda. Mix well.
Add flour mixture to egg mixture, 1 cup at a time, mixing well
after each addition. Add the vanilla, and beat well.
 
Batter will be thicker than most cake batters.
Add the thinly sliced pears to the batter.
Mix well (this will loosen the batter some).
 
Pour batter in prepared pan.
Bake in preheated oven for 1 hour (less time for shallow pans), and test for doneness with a toothpick inserted into the center of cake.
Bake until toothpick comes out clean.
Remove from oven, and transfer to cooling rack.
Remove cake from pan and cool completely on rack.
When cool, frost with glaze. Makes 12-16 servings.
 
Glaze
1 1/4 cups sifted powdered sugar
2 to 4 tbsp. milk
Combine the powdered sugar with the milk.
The mixture should be thin. Pour glaze over the cooled cake and allow it to drip down the sides.

Shortcut Fried Chicken with Sauce Beautiful
4 –6 Servings

1/2 cup flour
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 boneless skinless chicken breast halves, cleaned and cut diagonally
in half
1/2 cup butter
1/2 cup vegetable oil
Sauce Beautiful (recipe follows)
Mix the flour, salt, and pepper. Dredge the chicken breast pieces in
the mixture.
Melt the butter in a large heavy (preferably cast iron) skillet. Add
the oil and heat the mixture to 375°.
When the oil butter mixture has heated, add the chicken pieces, in a
single layer without crowding. The chicken pieces will cook quite
fast since there are no bones.
When the chicken breasts are golden brown on one side, turn them to
brown the other side. If the heat is correct, the chicken should be
cooked through by the time the second side is browned. Since
overcooked chicken breasts can be dry, make sure they are removed
from the oil butter mixture as soon as they are barely cooked through.
Serve with Sauce Beautiful.
Sauce Beautiful
Makes about 1 1/4 cups

1/2 cup peach jam or preserves
1/2 cup water
3 tablespoons freshly squeezed lemon juice
3 tablespoons brown sugar
1 tablespoon butter
1 tablespoon vegetable oil
1 tablespoon white wine vinegar
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 teaspoon Worcestershire sauce
If the peach preserves are really chunky, mash them with a fork or
put them in the food processor and process until smooth.
Mix the peach jam, water, lemon juice, brown sugar, butter, vegetable
oil, white wine vinegar, paprika, salt, pepper, and Worcestershire
sauce in a medium saucepan.
Bring to a boil over medium-high heat, stirring until slightly
thickened.
Alternatively, this may be prepared in the microwave oven; mix all
ingredients and microwave until boiling, 3-5 minutes.
If preparing this sauce ahead, transfer the sauce to an airtight
container and refrigerate for up to one week. To serve, microwave
until heated through, adding additional water if necessary.
