Tangy Broccoli Cauliflower Salad

1 head broccoli, chopped
1 head cauliflower, chopped
1 small red onion (or any onion), chopped
1 pint Miracle Whip
1/2 to 1 cup cooked, crumbled bacon
1/2 cup grated parmesan
1/4 cup sunflower seeds (optional)

Mix first 3 ingredients together and pale in salad bowl. Frost with a
layer of Miracle Whip. Sprinkle bacon, parmesan and seeds over. Cover
and chill overnight. Stir all together before serving.

Note: If you do not like Miracle Whip, you can substitute mayo and a
tablespoon or two of sugar.

Strawberry Dessert

1 stick melted butter
16 oz. vanilla wafers or pretzels
1 stick butter (not melted)
1 1/2 C. sugar
2 eggs
1 pint whipped cream
1 qt. sliced fresh strawberries

Crush wafers or pretzels. Add melted butter. Mix. Leave 1 C. crust aside. Press rest of crust into 9x13 pan. Chill for 1/2 hour. Blend second stick of butter and sugar then add eggs. Beat until light and fluffy. Pour on top of crust. Put sliced strawberries on top of filling. Spread whipped cream over strawberries. Put rest of crust on top.
Chill overnight.

Strawberry Banana Trifle

1 C. sugar
1/4 C. cornstarch
3 T. strawberry gelatin powder
1 C. cold water
1 pint fresh strawberries, sliced
1 3/4 C. cold milk
1 (3.4 oz) pkg. instant vanilla pudding mix
3 bananas sliced
1 T. lemon juice
6 C. cubed angel food cake
2 C. whipping cream, whipped
additional strawberries or banana slices optional

In a saucepan combine the sugar, cornstarch and gelatin; stir in water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from heat. Stir in strawberries; set aside. In a mixing bowl, combine milk and pudding mix. Beat on low speed for 2 minutes; set aside. Toss bananas with lemon juice; drain and set aside. Place half of the cake cubes in a trifle bowl or 3 qt. serving bowl. Layer with half of the pudding, bananas, strawberry sauce and whipped cream. Repeat layers. Cover and refrigerate for at least 2 hours. Garnish with additional fruit if desired.

Umm Jess Strawberrys spound yummy to me right now...

Chorizo Garbage Plate Recipe courtesy Chris Schwartz, co-owner Franks
in Kenosha, WI

2 to 3 tablespoons vegetable oil
2 cups shredded potatoes, or store-bought hash browns
1/2 cup diced onion
1/2 cup diced green pepper
1 tablespoon diced jalapeno peppers, optional
1 cup ground chorizo, browned
1/2 cup diced tomato
5 eggs
1/2 cup shredded Cheddar
Toast or tortillas, for serving

Preheat flat grill or a nonstick skillet over medium-high heat.
Add the vegetable oil, potatoes, diced onion, green pepper, jalapeno
pepper, if using, and
chorizo. Mix together slightly. Cook for 4 to 8 minutes, flipping
once. Add the tomato and eggs. Mix together and cook for another 2 to
3 minutes, flipping over once. Add cheese and cook until slightly
melted. Mix hash together to distribute cheese and tomatoes
throughout.

Serve with toast or tortillas.

If your Lady likes Cheese Cake then she will love ya for this even more so

Fried Cheesecake

1 prepared cheesecake (homemade or bought)
30 oriental spring roll wrappers
Egg Wash (whisk 1 egg with 1 cup of milk)
Vegetable oil (I use peanut oil)

Cut already -baked cheesecake into uniform pieces approx. 3x1 inch.

Lightly moisten each spring roll with the egg wash. Blot excess egg
wash with paper
towel.

Place each piece of cheesecake in the middle of wrapper. Fold top of
wrapper down over
the cheesecake, and both sides toward middle. Roll each piece of
cheesecake toward you
until it is completely rolled up. Give this "egg roll" a gentle
squeeze to make sure dough
is sealed completely.

Using a deep frying pan, heat at least 3 inches of oil to 365 F. Dip
the corner of one "egg
roll" in the heated oil. If it sizzles, it's ready. If not heat oil a
little longer. When the oil
is ready, gently release into the oil and allow to brown lightly
approx. 10 seconds.

Cool slightly before serving. These will be very hot.

Sauce

1/2 cup heavy whipping cream
2 tablespoons sugar (white or brown)
1 table spoon Amaretto or Rum.

Whip heavy whipping cream until peaks form. Add sugar and rum. Poor over
cheesecake. Sprinkle with cinnamon if desired.

Mexican Wedding Dessert

1 1/2 C. flour
1 1/2 sticks butter
4 oZ. cream cheese
2 small French vanilla pudding mix
1 1/2 C. chopped nuts
1 C. powdered sugar
3 C. Cool Whip

First Layer:
Melt butter in and pour into a 9x13 pan. Mix in flour & 1 C. nuts. Press in pan. Bake 20 minutes at 350. Cool 1 hour.
Second Layer:
Mix powdered sugar and cream cheese. Fold in 1 1/2 C. Cool Whip. Spread over first layer.
Third Layer:
Make 2 packages pudding mix according to directions on box. Pour over second layer.
Fourth Layer:
Top with Cool Whip. Sprinkle with nuts.

Chocolate Chip Cheese Bars

1 (18 oz) tube refrigerated chocolate chip cookie dough
1 (8 oz) pkg. cream cheese softened
1/2 C. sugar
1 egg

Cut cookie dough in half. For crust, press half of the dough onto the bottom of a greased 8" square baking pan. In a mixing bowl, beat cream cheese, sugar and egg until smooth. Spread over crust. Crumble remaining dough over top. Bake at 350 for 35-40 minutes or until a toothpick inserted in center comes out clean. Cool on a wire rack. Refrigerate leftovers.

Italian Sausage and Zucchini


Ingredients:

1-1/2 pounds Italian sausage links
2 small zucchini, sliced
1 small yellow squash, sliced
1/2 cup chopped onion
1 (14.5 ounce) can stewed tomatoes, with liquid
In
a large skillet over medium heat, brown the Italian sausage until the
inside is no longer pink. Cut sausage into 1/4 inch slices, and
continue cooking until browned.

Stir
in the zucchini, yellow squash, and onion; cook and stir for 2 minutes.
Pour in the tomatoes, with liquid. Reduce heat, cover, and simmer for
10 to 15 minutes.
